Haven’t posted a recipe on here for a while and just tried this new recipe which was quick, simple and delicious (and really gets a kick from the balsamic vinegar). It’s originally from BBC Goodfood, but I’ll post it with the modifications I made to it (primarily because the recipe suggested serving with mashed potato but I am a big fan of one-pot-wonders, so added potatoes).
About 6 potatoes, cut down to bite-size pieces
1 red onion, cut into wedges
1-2 red peppers, deseeded and cut into quarters
2 tbsp olive oil
2 tbsp balsamic vinegar
125g cherry tomatoes
Dried thyme, chives and marjoram (don’t hold back)
Black pepper (we don’t cook with salt)
1 tbsp clear honey
Chopped parsley, to serve
Heat oven to 200C/180C fan/gas 6. Put the onions, potatoes and peppers in a roasting tin, drizzle over the oil and vinegar and season well. Roast for 10 mins.
Nestle the sausages and tomatoes in and around the veg, season again, drizzle over the honey and cook for 25 mins more or so, turning the sausages halfway, until the sausages are cooked and everything is golden and sticky. Would have been great with some crusty bread as well, in which case I would have used much more oil and vinegar to have more juice to dip the bread in.
